This organic Tencha from Kagoshima is an exciting novelty.
"Niji" (Japanese for "rainbow") symbolizes the wide spectrum of delicate flavors this Tencha has to offer. Due to the heavy shading of the tea bushes before harvesting, particularly high amounts of chlorophyll, theanine and caffeine are formed in the plant. The bitter tannin content, on the other hand, remains low.Tencha is the preliminary stage of Matcha tea in the production process. After brief steaming and drying, the leaf tissue is separated from the leaf veins in an air stream. These flake-like Tencha leaves make an exquisite, aromatic-mild and multi-faceted infusion, or they are used as a decorative sprinkling seasoning in fine, experimental cuisine. An ideal crowning of noble dishes and a taste experience of a special kind.
