For the organically grown Watanabe Karigane Kukicha, the Watanabe family harvests leaves from various of their numerous tea bush varieties (including Asatsuyu, Yabukita and Sae Midori), and after steaming, kneading, rolling and drying the leaves, sorts the leaves with a special sorting machine that separates the leaf stalks (kuki) from the leaves. It is easy to understand how the exact function of the sorting machine determines the character of the tea produced after sorting. It is important for the character of the Watanabe Karigane Kukicha that although the "normal" leaves are sorted out, fine leaves and leaf buds together with the fine leaf stems belong to the leaf material of this Kukicha. A beautiful Kukicha from the first harvest.
