The plants are shaded in two stages for three weeks - a process that requires a great deal of experience, as it requires precise timing and great sensitivity without the use of chemical pesticides. But the effort is worth it: the fine, needle-shaped leaves develop their characteristic, deep green umami profile, which makes this Gyokuro an experience - both for the palate and the eye.

- Intensive & full: 7 g / 100 ml, 40-50 °C, 120 seconds (1st infusion)
- Balanced & aromatic: 3-4 g / 100 ml, 55-60 °C, 90 sec (1st infusion)
- Cold infusion: 3-4 g / 200 ml, cold water, 5 minutes - for summery light clarity
