This delicate tea comes from the slopes of Arasaki in Miyazaki Prefecture. There, the Kadota family has been cultivating special tea bushes of the Yama-Yabukita variety for generations - a mountainous variety with fine aromas and a gentle nature.
On infusion, the Tokujou is floral and clear, with a pleasant sweetness and an elegantly long finish. Unlike many modern senchas, the final heating here is chosen particularly carefully - only as much as necessary to preserve the tea well, but as little as possible so that its original character remains close to the freshness of a shincha.
Passionate tradition - living craftsmanship from the Kadota family
Tangible dedication behind every leaf: Junji and Yusuke Kadota work in shifts during the spring harvest - father during the day, son at night. Their small tea garden is not only organically farmed, but is also cultivated in a way that is rarely found in Japan today. The leaves are processed using historic kama - traditional roasting pans that the Kadota family took over from the Morimotos in the 1960s. Today, the two families are closely connected - ideologically, familially and through their understanding of quality.
Since 2014, the Kadotas have completely dispensed with synthetic fertilizers and pesticides. Due to the long lifespan of the plants, it will take patience until all the cultivation areas are fully certified according to organic guidelines - but the path is clear and can be felt in every cup.Recommendation for preparation
The Tokujou unfolds its full elegance with specially coordinated preparation:
- Water temperature: approx. 80 °C
- Dosage: 1 teaspoon (approx. 2 g) per 200 ml
- Brewing time: 60 seconds for the first infusion, 10 seconds for each subsequent infusion
Tip: Use fewer leaves and take your time when drinking - the Tokujou rewards mindfulness with ever new nuances.
