Are you looking for a Japanese organic matcha that carries the essence of traditional tea culture - rare, elegant, uncompromisingly good? The Shirasagi Uji Matcha is just that. Produced in vanishingly small quantities (less than 2.5 kg per year), carefully hand-picked and processed by hand in almost every step - this matcha is not just a product. It is an experience for connoisseurs with an eye for the extraordinary.
A treasure from Uji - hand-picked, hand-finished
The name Shirasagi - Japanese for "silver heron" - symbolizes the fine elegance of this tea. It comes from the high altitudes of Uji, the traditional center for high-quality Japanese green tea. For over four decades, the Nakanishi family has been growing matcha of exceptional quality here, protected by elaborately installed shade nets, using 100% organic methods. No artificial fertilizers, no chemicals - just patience, experience and dedication.
The harvest begins at the end of April. As soon as the young green leaves are collected by hand, an elaborate and largely manual process follows: the leaves are processed into tencha and then slowly ground on stone mills - until the finest matcha powder is produced, bright green and vibrantly fragrant.Pure, original - and almost too good to share
Only leaves from a particularly sweet and aromatic variety of tea bush are used for Shirasagi - harvested only once a year for maximum umami and a soft texture. All processing steps, from harvesting to steaming and packaging, are carried out by hand - with the exception of sieving, which is supported mechanically in exceptional cases. The result? An authentic, unadorned, fine drinking-grade matcha for quiet moments of pleasure.
Taste & color
In the bowl, Shirasagi is deep green and velvety. On the palate, it is initially lightly fruity and almost playful - without any bitterness. What remains is a round, creamy finish with a subtle sweetness. Compared to Takeno Jōō Uji Matcha, it is slightly lighter in umami, but just as strong in character.

Annual production is less than 2.5 kg. This limited rarity has been reserved exclusively for matchashop.de - in a few tins of 30g each. Certified organic according to EU organic regulations
