As rare as it is precious
The total quantity of this matcha is more limited than almost any other: Only a few kilograms leave the Nakanishi family's tea garden in Uji each year - the place steeped in history that is considered the cradle of "true tea" in Japan. It was only thanks to long-standing relationships that we were able to secure a small number of 30g tins for our store.
Special feature: The entire processing - from harvesting to packaging - is carried out almost entirely by hand. Only the sieving of the leaf ribs is done by machine. Every single processing step before and after is carried out by experienced hands - with calm, skill and an enormous awareness of quality.The garden that makes everything possibleThe Nakanishi family's tea garden covers just 1.25 hectares - and yet it is one of the most remarkable organic tea gardens in Japan. The family has been growing organic tea there since 1980, traditionally shaded with elaborate net constructions that slow down the growth of the tea bushes and intensify their aroma. The harvest takes place once a year - by hand, supported by around 30 helpers who respect the rhythm of nature.
Selected leaves, gently processed
Only the sweetest and most umami-rich leaves of the shrub variety of the family are used for Hanomi Uji Matcha. After careful harvesting, the leaves are processed into tencha and then slowly ground into fine matcha on traditional granite mills - a sensitive process that optimally preserves the aromas and nutrients.
Taste that tells a story
In the bowl, Hanomi Uji Matcha has an intense green and velvety aroma. Its first impression in the mouth is fruity and fresh with almost no astringency. Then a creamy, pleasantly sweetish aftertaste with a fine umami develops. Compared to its "big brother", the Takeno Jōō Uji Matcha, the Hanomi Hauch is milder in sweetness and umami - but with a delicate, barely noticeable tart note that adds depth.
Recommended preparation
- Quantity: 1-2 g matcha to 120 ml water
- Water temperature: Maximum 80 °C, ideal: 65 °C
