Imagine this: A mist-shrouded mountainside in the Kirishima Mountains, far away from street noise and industry. There, nestled in the pure, lush nature of southern Japan, the Hayashi family nurtures and cares for one of the most delicate yet fascinating tea bush varieties of all: Asatsuyu - often affectionately referred to as the "natural Gyokuro".
This Kirishima Tennen Gyokuro comes from exactly these bushes. Certified organic. Cultivated with rare patience. And harvested with a flavor nuance that literally makes connoisseurs rave: soft, deep green, unobtrusively sweet - and yet expressive in structure and finish.
Sophistication meets responsibility
Asatsuyu shrubs are considered to be particularly sensitive to natural environmental influences. This is why they are extremely rare in organic cultivation. Nevertheless, the Hayashi family manages to protect them without using any chemicals - thanks to decades of knowledge, microscopic observation and a deep feeling for the rhythm and changes in nature.
A shading period of around three weeks before harvesting also gives the tea a remarkable depth. The fine sencha needles develop a bright green color in the cup and a harmoniously balanced umami experience that reveals new nuances with every cup.
Preparation as a small ritual:

1-2 teaspoons (2-3 g) per 200 ml of water

50-60 °C - for maximum aroma

50 seconds for the first infusion, 10-15 seconds for the second to fourth
