Organic Hojicha – Roasted Sencha from Shizuoka
This Hojicha is based on a blend of the structured Yabukita cultivar and terroir-influenced Zairai plants. Through thermal treatment at approximately 200 °C, the leaves undergo a controlled Maillard reaction that transforms the chlorophyll and catechins they contain. This roasting process significantly reduces astringency and caffeine content, while pyrazines provide a distinct roasted aroma with nuances of dark cocoa and walnut. The result is a full-bodied infusion with an amber-colored cup that impresses with its low acidity and gentle mouthfeel.
