It states how long the product keeps its typical properties such as color, aroma and taste when stored correctly. A passed date does not automatically mean the tea is no longer safe. Matcha is ground tea and because of its large surface area it reacts with oxygen over time. This oxidation slowly reduces color and aroma. It does not spoil like bread or milk. Even after the date it remains safe to consume, it simply tastes less fresh and the color looks duller. Producers print very different durations. Some only six months, others up to three years. Shelf life depends strongly on whether the matcha was packed under protective atmosphere nitrogen instead of oxygen. In such tins it stays stable until you open it. We receive replenishments from Japan very regularly, typically two to three times per month. This means we always have fresh lots in stock and ship exactly those. In short, our teas come from the most recent possible delivery or harvest year.
To place the season in context. The first harvest in Japan usually begins in late April to early May. It takes at least about six weeks for leaves to be steamed, dried, stored and then milled into matcha. The new harvest is realistically available from around July. From roughly July until roughly June of the following year we offer the current, freshest harvest.
Important. Many high quality matcha and some teas are blends. Producers combine lots from different harvest years to create a consistent taste profile throughout the year because natural products vary with weather and harvest conditions. For such blends it does not make sense to name a single harvest year because the composition is made across years by design.
If a tea clearly belongs to a single season, we indicate this in the product description. If you have questions about a specific tin, just ask us.
No, most of our matcha are blends. That means they are not made from a single cultivar. Experienced tea masters compose them from different cultivars and harvest lots.
Why blend. Matcha is a natural product and every harvest is a little different depending on climate, sun and rainfall. A matcha that tastes soft and floral in 2023 might be stronger and more bitter in 2024 even from the same cultivar. Producers blend cultivars and lots so you can rely on a consistent taste.
This is not a compromise. It is a craft. Tea masters taste hundreds of samples to create a balanced profile that remains consistent every year. More Yabukita can bring depth, a touch of Asatsuyu adds sweetness. Balance creates a signature matcha.
There are also single origin matcha made from a single cultivar. They can be exciting for curious drinkers but may vary more from year to year.

Questions after buying
Matcha is sensitive to light, air, heat and moisture. After opening the tin or pouch, pay extra attention to storage. Keep matcha in its original package or in a well sealed tin so it stays airtight.
A cool, dark place is ideal, for example the refrigerator. Important. Take the tin out a few minutes before opening so condensation does not form in the powder. Also keep matcha away from strong odors like cheese or onions, as it easily absorbs foreign smells.
We recommend buying smaller sizes and finishing them within about four to six weeks after opening. That way you enjoy full freshness, vivid color and a fine aroma.
In short. Dark, cool, dry and well closed keeps your matcha in top quality for as long as possible.
Once opened, oxidation begins. Contact with oxygen gradually reduces color and aroma. When stored airtight, cool and protected from light, matcha generally remains enjoyable for at least six months.
Good to know. Matcha does not spoil like milk or bread. It does not become unsafe. It simply loses quality. Signs of oxidation include a duller green or a flatter taste.
If you use matcha after half a year it is still safe to drink. It just tastes less vibrant. That is why smaller packs are a good idea so you can finish them within a few weeks.

A fine, creamy foam is the hallmark of well prepared matcha. If it does not appear, the reason is usually preparation, not the powder. Technique matters. With a chasen bamboo whisk, whisk in quick, relaxed strokes in an “M” or “W” pattern rather than in circles. This incorporates air and creates foam.
Water volume matters too. Use about 70–80 ml for 1 g of powder. If the bowl is too full it is harder to whip a stable foam. Make sure your chasen is dry and in good condition. Damaged tines make whisking difficult.
If you do not have traditional tools, a small electric milk frother also works and creates stable foam easily.
With a little practice you will quickly get a feel for the right motion and will be rewarded with a silky foam after just a few tries.
Matcha ranges from sweet umami to lightly bitter. An unpleasant bitterness usually has two common causes.
1. The tea itself. Everyday grades made from sturdier leaves taste more robust and slightly bitter. They are better for latte or recipes. For pure bowls choose finer drinking grades with more sweetness and umami.
2. Preparation. Water that is too hot can extract bitterness. Aim for 70–80 °C. Too much powder can also overwhelm the balance.
Our tip. Dose a bit lighter, use soft water and keep the temperature lower. As a rule of thumb, the higher the grade, the cooler the water. For exceptional teas we sometimes suggest 40–50 °C.
Bitterness does not mean the tea is bad. It simply means tea, dose or method were not ideally matched.
