Its character: delicately tart, creamy, with a subtle hint of umami. As gentle as the morning mist over the tea fields of Kagoshima - and that is exactly where its journey begins.
Harvested where mist makes sense
The leaves for this matcha come from the second harvest of the year - harvested in early summer in Kagoshima Prefecture in southern Japan. The organic tea plantation there is located at a lofty height of around 500 meters. What sounds like a poetic detail makes all the difference: the daily change of sun and fog, day and night temperatures, forces the plants to develop intense aromas. And because the fields are shaded in the final weeks before harvest, the content of theanine, chlorophyll and antioxidants increases - no coincidence, but a living tea culture.
Naturally sustainable thinking
The tea comes from a 100% organic farm - controlled by a Japanese organic inspection body, but that's just the beginning. The neighboring farms also work organically or - just like our tea farmer - voluntarily refrain from using any form of pesticide. Instead of chemicals, they rely on manual labor, compost from wild mountain plants and airflow instead of pesticides. Even the weeds are plucked by hand. No detail is too small for this dedication.
By avoiding industrial fast-track harvesting, the tea plants are allowed to grow for a full five years before they are harvested for the first time. The result: deeply rooted plants with an exceptional nutrient density - and a tea that not only tastes good, but is noticeably good for you.
Grounded - to the rhythm of the stone
After harvesting, the so-called tencha - the leaf flesh freed from stems - is ground in traditional granite stone mills. One hour, 30 grams of matcha. No more than that. Why? Because this is the only way to create that unique, velvety texture that you can feel immediately when you froth it up. Homogeneous. Bright green. Pure.
