Harvested in the southern prefecture of Kagoshima, where volcanic rock, proximity to the sea and mountain mist create a terroir that is second to none in the world. Here, on a hill around 500 meters above sea level, particularly nuanced leaves are created - thanks to gentle morning mist, strong temperature differences and a mindful approach to nature and the soil.

Our tea farmer lets the plants grow for five years before they are harvested for the first time - so that they develop deep roots and are naturally resilient. Without any synthetic fertilizers or pesticides. Instead: self-fermented compost from wild mountain plants, carefully aerated and cultivated for years. The result is soil that lives - and tea plants that flourish powerfully.
The matcha is traditionally ground in granite stone mills - with the utmost care, directly in Japan. One mill produces just 30 grams of matcha per hour. This produces the extremely fine powder that rises in your bowl like a silent mist and unfolds velvety on the tongue.

Recommended preparation
We recommend the following ritual for a bowl of matcha:
- Put 1-2 lightly heaped bamboo spoons (approx. 1-2 g) of matcha into the bowl .
- Stir with a small sip of water (max. 80 °C) until a smooth paste is formed .
- Pour in another 60-80 ml of water (ideally 65-70 °C).
- Whisk in a zigzag motion with the bamboo whisk until a fine foam forms.
Breathe through. Feel the warmth of the bowl. And enjoy.
Notes on storage
After opening, please store in the refrigerator and always keep dry, protected from light and tightly closed to preserve the fine aroma.
