They cultivate the tea bush varieties Oku Midori and Oku Yutaka on small plots directly behind their home in the rolling green Kyushu countryside - and they do so with the tranquillity and mindfulness that you can taste in their tea quality.
The Morimoto Sencha Okumidori is a tea for those who seek depth in simplicity. It comes mainly from unshaded cultivation (Roji Saibai), whereby some of the leaves are deliberately shaded to accentuate the delicate sweetness. It is harvested twice a year - in May and August - when the leaves have reached their ideal degree of ripeness. Then everything happens very quickly: the leaves are processed directly on the farm's own facilities - without long transportation routes and without any loss of flavor.
For this sencha, the Morimoto family specifically selects slightly firmer leaves that have only been lightly steamed (asamushi). This gentle processing results in a clear, golden-green infusion, which does not become bitter even at high temperatures - but remains round and surprisingly mild. The aroma is elegantly green, with light vegetal notes and a hint of umami: present, but never overpowering.A fascinating detail: After the second harvest, the bushes are cut back completely - a traditional rejuvenation method that ensures that the summer harvest also displays a balanced mild character. The result is a tea that shows how much love and precision can go into even the simplest leaf - if you just let it.
