For this Houjicha, Shutaro Hayashi uses the leaves of the autumn harvest, which are roasted vigorously after processing into Sencha. Even with this simpler tea, Shutaro remains true to his production style. The even structure of the leaves results in a beautiful marbling of different shades of red and brown. The nutty taste of the roasted tea is accentuated with a slight sweetness.
