The Mie Tokujou Sencha comes from the mountainous Uji region of Mie Prefecture, where the cool, damp climate allows the leaves to ripen more slowly - with impressive aromatic results. A tea like this is not a mass-produced product. It is the result of decades of experience, care and trust in the rhythm of nature.

For this premium Sencha, which is known in Japan as Tokujou - meaning particularly high quality - the Hayashi family harvests only the finest leaves of the Asatsuyu, Sayama Kaori and Yabukita varieties at the beginning of May. The slightly prolonged steaming (chu-mushi) gives the leaves a fine structure and a rich dark green. The infusion shines in a radiant, slightly cloudy neon green - a visual indication of the special depth of this tea.

The fragrance is delicately floral, while the taste is surprisingly smooth, with a pleasant sweetness and fresh, clear nuances. This sencha has an almost meditative effect - ideal for slowed-down moments when you want to taste deeper than just the surface.

• 1 teaspoon to 200 ml water
• Water temperature: 60 - 70 °C (140 - 158 °F)
• Brewing time: 60 seconds for the first infusion, from the second infusion only 10 seconds - up to four infusions possible
