The basis: hand-picked leaves from the early June harvest, mainly from the shrub varieties Oku Yutaka and Oku Midori, carefully shaded for around ten days. This process intensifies the sweetness and enhances the green amino acids - a practice that has its origins in traditional Kabusecha cultivation.
In addition, the finest
drinking-grade matcha from the April harvest - also from the Morimoto family's tea garden - is carefully mixed in as a powder. The result? A cup that shows layers:
- At the first infusion: velvety depth, voluminous sweetness, slightly algae-like notes from the matcha
- For later infusions: floral lightness, subtle astringency and the elegant play of Sencha
